Nabe

Nabe is the overarching word for hot pot dishes in Japan. There are a huge variety of kinds made with all different bases (like dashi or miso) as well as specific kinds like oden or sukiyaki. There are also regional varieties that use ingredients that are specific to the region.
CHINESE HOT POT

As you might imagine, Chinese Hot Pot, sometimes called fondue Chinoise, originated in China — probably during the Zhou dynasty. With this cooking method, a communal pot boiling liquid is served with a variety of raw, bite-sized foods that each diner cooks for themselves. In its most basic form, the liquid can be plain water, but there are versions of hot pot that involve all sorts of ingredients — ranging from mild to super spicy — often based on regional recipes from throughout China.
Taiwanese hot pot

One thing I love about winter is reuniting with friends and family. Regardless in Taiwan or in US, winter is the season of reunion. Taiwanese hot pot is something that you can enjoy with the whole family. In Taiwan, during the Chinese new year, relatives from all over the world will come back to Taiwan just to sit by this big hot pot and enjoy the family time together.
HOT POT AND SAUCES

Hot pot is fun and delicious. I love the versatility of the broth, the array of vegetables, the paper-thin variety of proteins, extras like wide noodles or dumplings, and the sauces. You get your own set of dipping sauces for each steaming bite. Originating in Asia, the broth varies from country, region, and local specialty as do the platter of items to quickly cook in the simmering pot. I have had this dish many ways and with varying groups of people, but I find my favorite way is to catch up with a friend over a hot pot for 2.
